Irish Potato Candy - cooking recipe

Ingredients
    1 large or 2 medium Irish potatoes
    1 box confectioners sugar
    peanut butter
Preparation
    Boil potatoes with skin until soft.
    Remove skin and mash potatoes.
    Add sugar and mix until you have the consistency of stiff dough.
    Turn onto board or waxed paper and roll out until you have a thin layer.
    Spread a layer of peanut butter on top. Roll up into a long roll and slice about 1/2 inch thick.
    Let set until firm.
