Steak Diane - cooking recipe
Ingredients

2 steaks (1/2-inch thick)
salt and pepper
2 Tbsp. unmelted butter (to clarify butter, heat in pan until clear in color)
cognac
1/2 oz. dry sherry
1/2 lemon
1/2 tsp. mustard
1 Tbsp. minced chives
1 tsp. minced parsley
2 tsp. Worcestershire sauce
Preparation

Sprinkle steaks with salt and pepper.
Saute in clarified butter until they are light brown.
Add the sherry and cognac and set on fire.
When blaze subsides, remove steaks to warm platter. Do not pour off liquid in pan.
Squeeze lemon juice into pan. Then add mustard, parsley, chives and Worcestershire sauce.
Stir well and heat to bubbly.
Spoon over steaks.
