Irish Tea Biscuits - cooking recipe

Ingredients
    5 c. flour
    1/2 c. sugar
    2 tsp. salt
    2 Tbsp. baking powder
    2 tsp. baking soda
    1 c. raisins
    1 to 2 Tbsp. caraway seed (optional)
    1 egg, slightly beaten
    2 c. buttermilk
    grated lemon rind or grated orange rind (optional)
Preparation
    Mix the first 5 ingredients.
    Cut in the butter until mixture resembles coarse cornmeal.
    Add raisins, caraway seed and rind. Stir in the egg and buttermilk just to moisten.
    Turn on a well floured surface and knead 8 to 10 times.
    Roll out to 1/2-inch thickness.
    With a biscuit cutter or inverted glass rim, cut out biscuits.
