Black Bean Soup And Pumpkin - cooking recipe

Ingredients
    1 lb. black beans
    1 tsp. salt
    2 Tbsp. vegetable oil
    1 1/2 c. chopped onion
    3 cloves garlic (large)
    3/4 c. canned tomatoes
    1 c. fresh or canned pumpkin puree
    2 to 3 c. vegetable or beef soup stock (powdered stock is fine)
    1 Tbsp. cumin
    3 to 4 Tbsp. sherry vinegar
    1/2 c. sherry
    salt and pepper to taste
Preparation
    To prepare the beans:
    Wash them in cold water, picking out any foreign matter.
    In a large bowl or pot, cover the beans with cold water and soak overnight.
    The following day, drain the beans.
