Pigeon Peas And Rice(West Indian Dish) - cooking recipe

Ingredients
    1 bag pigeon peas or 2 cans green pigeon peas*
    1 clove garlic
    1 onion
    4 to 5 beef sausages or 1/4 lb. fatback
    3 Tbsp. butter
    seasonings to your taste
    paprika
    tomatoes and canned or pkg. coconut (optional)
Preparation
    *Purchase dried bag pigeon peas at most supermarkets and canned green pigeon peas at a Spanish-American Bodega store.
