Different Sweet Potatoes - cooking recipe
Ingredients

2 medium cans sweet potatoes
1 medium can apricot halves
1/2 c. pecan halves (more if desired)
1 c. brown sugar
1 1/2 Tbsp. cornstarch
1 tsp. orange rind
1/4 tsp. cinnamon
1 1/4 c. apricot juice
2 Tbsp. butter/margarine
Preparation

Drain potatoes and apricot juice (save enough to make 1 1/4 cup liquid).
Dice potatoes into bite size pieces.
Arrange in layers of potatoes, apricots and nuts.
Mix dry ingredients in saucepan.
Over low heat, slowly add apricot juice.
Stir until thick.
Add margarine and pour over layered ingredients.
Heat 25 to 35 minutes at 375\u00b0 (9 x 13-inch casserole).
Serves 10 to 12.
