Salt Rising Bread - cooking recipe
Ingredients

3 c. flour
2 Tbsp. white corn meal
1 Tbsp. sugar
1 c. milk
1 tsp. salt
1 Tbsp. shortening
Preparation

Scald milk.
Cool until lukewarm.
Add sugar, shortening, salt and corn meal.
Place in quart fruit jar.
Set in water, 120\u00b0.
Let stand 6 to 7 hours until fermentation can be noted.
Add 1 1/2 cups flour to make sponge.
Beat vigorously.
Set the sponge in water, 120\u00b0, until very light.
Add remaining flour to make dough stiff enough to knead.
Knead for 10 minutes.
Place immediately in greased baking pan.
Let stand until double in bulk and bake.
Bake at 400\u00b0 for 50 minutes.
This is heavier than other bread.
Makes very good toast.
