Spiced Tongue - cooking recipe

Ingredients
    2 to 3 lb. beef tongue
    3 whole black peppers
    2 tsp. salt
    1 onion, sliced
    3 bay leaves
    6 whole allspice
    2 ribs celery and leaves, diced
Preparation
    Wash
    tongue,
    cover
    with hot water and add seasoning. Simmer about 3 hours.
    Let cool in liquid.
    Trim excess tissue from the tongue and remove the skin.
    Slice and serve.
    It's a very good dish.
