Vegetable Medley - cooking recipe
Ingredients

4 to 5 tomatoes
1 medium zucchini
3 to 4 small yellow squash
1 large onion
6 to 8 fresh mushrooms
2 Tbsp. parsley
2 tsp. salt
1/2 tsp. black pepper
1/3 c. Parmesan cheese
1 1/2 tsp. oregano
Preparation

In a 9 x 12-inch baking dish sprayed with food release, layer 4 to 5 tomatoes (that have been quartered), layer the zucchini (sliced), layer the yellow squash (sliced), layer the onion (thinly sliced) and layer the fresh mushrooms (sliced).
Sprinkle on top of each the seasonings.
Bake at 400\u00b0 for 20 to 25 minutes uncovered.
