Oven-Roasted Potatoes - cooking recipe
Ingredients

1 envelope onion or onion/mushroom soup mix
2 lb. all-purpose potatoes
1/3 c. olive oil
Preparation

Preheat oven to 450\u00b0.
Wash potatoes thoroughly; do not peel. Cut potatoes into chunks, 1-inch or 1 1/2-inches.
Place in a gallon-size Ziploc plastic bag along with olive oil and soup mix. Close bag and shake to thoroughly coat potatoes.
Place in shallow baking dish or pan (9 x 10 x 2-inch).
Bake about 40 to 45 minutes, stirring occasionally, until potatoes are tender and golden brown. Garnish with chopped fresh parsley, if desired.
Makes 8 servings.
