Coconut Bread - cooking recipe
Ingredients

2 c. sugar
1 c. margarine
4 eggs
1 tsp. almond essence
2 c. coconut, grated (fresh is best)
6 c. flour
4 tsp. baking powder
1 1/2 c. coconut water or regular water
raisins (optional)
cinnamon and sugar (for top of bread)
Preparation

Beat eggs and sugar together.
Add eggs, almond essence, coconut, flour, baking powder, water and raisins.
Put this mixture into a greased and floured loaf pans (divide between 2 or 3 loaf pans, too much for one).
Make a little indentation in loaf, put reserved coconut and cinnamon and sugar into this indentation on top of the loaf.
Bake at 325\u00b0 until toothpick inserted into loaf comes out clean.
