Lee'S Jambalaya - cooking recipe

Ingredients
    1 c. chopped green pepper
    1/2 c. chopped onion
    2 garlic cloves peeled and chopped
    1 lb. canned tomatoes
    1 1/2 c. water
    1 c. uncooked rice
    1/2 tsp. thyme
    1/4 tsp. salt
    1 bay leaf
    pepper to taste
    1/4 c. chopped parsley
    1 1/2 lb shrimp peeled and deveined
Preparation
    Saute green pepper, onion, and garlic.\t Add all ingredients except shrimp and parsley.\tSimmer 60 to 75 minutes
    (might need more water) 30 minutes if using Minute Rice.
    Add parsley and shrimp, simmer till done.\tRemove bay leaf before serving. Serves 6.
