Giblet Gravy - cooking recipe

Ingredients
    heart, gizzard and neck of turkey
    1 stalk of celery
    1/4 to 1/2 c. onion, chopped fine
    4 Tbsp. drippings from roasted turkey
    3 Tbsp. flour
    2 c. giblet broth
    salt to taste
Preparation
    Cook heart, gizzard, neck, celery and onion until tender; drain.
    When cool enough to handle, chop giblets rather fine. Blend drippings and flour; add broth and cook, stirring constantly until gravy thickens.
    Add salt and stir in giblets.
    Heat and serve.
