Chicken Enchiladas - cooking recipe

Ingredients
    1 medium onion, chopped
    2 Tbsp. butter
    1 1/2 c. shredded cooked chicken
    1 c. picante sauce
    3 oz. cream cheese
    1 tsp. ground cumin
    1 1/2 c. grated Jack cheese
    oil
    8 corn tortillas
    green onion slices
Preparation
    Cook onion in butter until tender.
    Stir in chicken, 1/4 cup picante, cream cheese and cumin.
    Heat through.
    Remove from heat. Stir in 1/2 cup of shredded cheese.
    Heat oil in skillet, fry tortillas to soften, drain on paper towels.
    Spoon chicken mixture into each tortilla; roll and place seam side down in 9 x 13-inch baking dish.
    Spoon remaining picante and cheese over tortillas. Bake 15 minutes in 325\u00b0 oven.
    Top with onions.
