Cinnamon Zucchini Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    1 c. oil
    2 c. sugar
    2 c. zucchini, peeled and grated
    3 tsp. vanilla
    3 c. flour
    1 tsp. salt
    1/4 tsp. baking soda
    3/4 tsp. nutmeg
    3 tsp. cinnamon
    1 c. nuts (black walnuts)
Preparation
    Mix together first five ingredients.
    Sift together remaining five ingredients (except nuts).
    Add dry ingredients to zucchini batter.
    Mix. Grease and flour 2 loaf pans.
    Add nuts to the batter.
    Divide batter evenly into 2 loaf pans.
    Bake at 325\u00b0 for one hour.
    Cool 10 minutes on rack.
    Turn out of pans.
    Cool completely and refrigerate.
    Freezes well.
