Spinach Rosito - cooking recipe

Ingredients
    1 c. white rice
    2 Tbsp. olive oil
    1 c. chopped onion
    1 Tbsp. minced garlic
    4 c. chicken broth
    2 c. fresh chopped spinach
    3 tsp. chives or 3 Tbsp. fresh
    1 tsp. thyme
    salt and pepper
    1/2 c. Parmesan
Preparation
    Heat oil in saucepan.
    Add onion and garlic.
    Cook on low. Simmer 5 minutes.
    Add rice; stir another 3 minutes.
    In a separate pan bring broth to a boil.
    Slowly add 1 cup broth to 1 cup rice, then add spinach and thyme.
    Add rest of broth.
    Stir and add salt, pepper and Parmesan cheese.
    The rice should be cooking a total of 25 to 30 minutes.
