New England Clam Chowder - cooking recipe
Ingredients

1/4 lb. salt pork, diced
1/2 c. onion, diced
1 1/2 c. potatoes, peeled and diced
2 c. clam broth
2 c. milk or light or heavy cream
1/2 tsp. salt
1/4 tsp. pepper
2 c. clams, drained and chopped fine
3 Tbsp. butter
Preparation

Saute salt pork in Dutch oven. Remove and reserve.
Add onion and saute until golden. Add potatoes, clam broth, salt and pepper. Simmer until potatoes are tender, but not mushy.
Add clams and simmer for 5 minutes. Add milk and butter.
Heat, but do not allow to boil. Add cooked salt pork.
Adjust seasoning and serve with saltines.
