Pear Butter - cooking recipe

Ingredients
    20 ripe pears
    4 c. sugar
    1 tsp. grated orange rind
    1/3 c. orange juice
    1/2 tsp. ground nutmeg
Preparation
    Quarter and core pears; place in large pan.
    Add enough water to prevent sticking.
    Cook until soft.
    Press through sieve of food mill.
    Measure pulp.
    Combine 2 quarts pulp with remaining ingredients.
    Cook 15 minutes or until thick, stirring.
    Put in hot jar.
    Process in hot water bath 180\u00b0 for 10 minutes.
    Cool. Test for seal.
