Fruit And Nut Loaf - cooking recipe

Ingredients
    2 c. sifted all-purpose flour
    4 tsp. baking powder
    1 tsp. salt
    2/3 c. sugar
    1 c. chopped nuts
    3/4 c. finely cut dried, uncooked apricots or dates
    1 egg
    1 c. milk
    3 Tbsp. melted shortening
Preparation
    Set oven at 375\u00b0 to preheat.
    Sift together in large mixing bowl, flour, baking powder, salt and sugar.
    Add remaining ingredients and beat on medium speed until mixed, about 1/2 minute.
    Turn into greased 9 x 4 x 3-inch loaf pan.
    Let stand about 20 minutes before baking.
    Bake about 1 hour or until toothpick inserted in middle comes out clean.
    Turn out of pan. Cool on cake rack.
    Slices better 1 day old.
