Mexican Cornbread - cooking recipe
Ingredients

1 c. yellow cornmeal
1 c. milk
2 eggs
3/4 tsp. salt
1/2 tsp. soda
1/2 c. bacon drippings
1 (1 lb. 1 oz.) can cream-style corn
1 lb. ground beef
1 large onion
1 lb. yellow cheese
5 canned jalapenos
Preparation

Combine cornmeal, milk, beaten eggs, salt, soda, bacon drippings and corn.
Mix well and set aside.
Brown ground beef and drain well.
Pour half of batter into well-greased cast-iron skillet that has been dusted with cornmeal.
Sprinkle cheese evenly over batter.
Sprinkle meat over cheese.
Sprinkle chopped onion and jalapenos evenly over meat.
Top with remaining batter and bake at 350\u00b0 for about 50 minutes.
Serve hot.
Serves 6 to 8.
