Ingredients

1 c. evaporated milk
1 c. water
2 eggs
6 Tbsp. flour
1 c. light brown sugar
1/2 tsp. salt
3 Tbsp. butter
1 tsp. vanilla
1 can coconut
Preparation

Mix flour, sugar and salt.
Set aside.
Scald milk and water in a double boiler.
Add sugar and flour mixture.
Over medium heat, cook slightly.
Remove 1/2 cup of mixture and add beaten egg yolks; mix and cook until thick.
Remove from heat.
Add butter and 1/2 can coconut.
Blend and pour into baked pie shell.
Top with meringue or Cool Whip.
Sprinkle with rest of coconut.
