1/2 cup fine graham crackers
3 egg whites
3 egg yolks
1/2 cup sugar
1 cup whipping cream (1/2 pt. heavy cream)
2-3 tsp lemon peel
1/4-1/3 cup lemon juice
Preparation

Sprinkle 1/2 crumbs in a well greased pie pan. Beat egg whites-gradually add sugar and beat until stiff and glossy. Beat egg yolks until thick and lemony. Fold into egg whites, cream. Add lemon rind & juice, mix well. Fold into egg mixture. Pour into pan. Top with crumbs. Freeze.
