Lo-Fat Cheese Potatoes - cooking recipe
Ingredients

4 c. diced potatoes
2/3 c. lo-fat cottage cheese
1/2 c. light sour cream
2 tsp. flour
1 tsp. salt
1/4 tsp. garlic
dash of pepper
2 oz. lo-fat Cheddar cheese
1/4 c. chopped onion
1/4 c. cornflake crumbs
1 tsp. melted margarine
Preparation

Boil the potatoes in water until tender. Drain. Place potatoes in ungreased 1 1/2-quart baking dish. Combine in processor bowl or blender the cottage cheese, sour cream, flour, salt, pepper and garlic. Blend until smooth. Add mixture to cheese and onion.
Stir gently.
In small bowl, combine cornflake crumbs and margarine. Mix well. Sprinkle over the potatoes. Bake at 350\u00b0 for 20 minutes. Let stand 10 minutes before serving.
Serves 8.
