Rice Con Queso - cooking recipe
Ingredients

2 c. cooked rice
1/2 onion, chopped
2 cans (4 oz. each) chopped green chilies
1/2 red sweet pepper, diced
1 1/2 c. plain nonfat yogurt
1 tsp. cumin
1/2 tsp. oregano, crushed
1 c. low-fat Cheddar cheese, grated
Preparation

Lightly spray 1 1/2-quart casserole with vegetable cooking spray.
Combine all ingredients and pour into casserole.
Bake, uncovered, in 350\u00b0 oven for 30 minutes or until heated thoroughly.
