Pastry For One 9-Inch Pie - cooking recipe

Ingredients
    1/3 c. plus 1 Tbsp. shortening
    1 c. plain flour
    1/4 tsp. salt
    2 to 3 Tbsp. cold water
Preparation
    Cut shortening into flour and salt until particles are small pea size.
    Sprinkle in water tossing with a fork until all flour is moistened and pastry almost cleans inside of bowl.
    One or 2 tablespoons more water may be added, if necessary.
    Roll dough in a ball and flatten round on lightly floured cloth board.
    Roll pastry 2 inches larger than inverted pie plate with cloth covered rolling pin.
    Fold pastry in quarters and place in a pie plate. Unfold and ease into plate.
    Press firmly into plate.
