Salami - cooking recipe

Ingredients
    5 lb. cheap ground meat
    3 Tbsp. Morton quick curing salt
    2 1/2 tsp. mustard seed
    2 tsp. celery seed
    2 1/2 tsp. peppercorns
    1/2 tsp. garlic powder
    1 1/2 tsp. liquid smoke
    3 to 4 drops Tabasco sauce
Preparation
    Mix seasonings and then mix into meat. Refrigerate for 1 hour. Form into 1 pound rolls.
    Place on broiler pan and bake at 300\u00b0 about 1/2 hour or until inserted thermometer measures 155\u00b0.
    Serve with crackers.
