Hot And Sour Spinach Salad - cooking recipe

Ingredients
    1/4 c. fine, dry bread crumbs
    1/8 tsp. salt
    4 oz. reduced fat Monterey Jack cheese, cubed
    1 egg white, lightly beaten
    6 c. torn fresh spinach
    1/2 c. sliced green onions
    3 Tbsp. brown sugar
    1/4 c. plus 2 Tbsp. canned low-sodium chicken broth, undiluted
    3 Tbsp. balsamic vinegar
    1/2 tsp. hot sauce
    2 large pink grapefruit, peeled and sectioned
Preparation
    Combine bread crumbs and salt; stir well.
    Dip cheese in egg whites; dredge in bread crumb mixture.
    Place cheese on a baking sheet lined with wax paper.
    Freeze 30 minutes.
