Jambalaya - cooking recipe
Ingredients

2 lb. shelled shrimp
1/2 lb. smoked sausage
1 medium onion, chopped
1 stick oleo or butter
2 c. rice
1 Tbsp. Creole seasoning
1 bell pepper, chopped
1 clove garlic, chopped
1 rib celery, chopped
2 c. water
2 c. tomatoes
Preparation

Saute garlic, onion, bell pepper, celery, sausage and oleo in heavy pan for 5 minutes.
Add tomatoes, shrimp, water and seasoning to taste.
Cook 10 minutes.
Stir in rice.
Bring to a boil.
Reduce heat and simmer for 30 minutes or until rice is cooked.
Serves 8 generously.
