Banana-Jam Muffins - cooking recipe

1/2 c. butter flavor shortening
1 c. granulated sugar
2 eggs
1 3/4 c. self-rising flour
1/3 c. oat bran
1 tsp. baking powder
1/2 tsp. salt
1 c. mashed, ripe banana
1 tsp. lemon juice
1/2 c. strawberry jam
1 tsp. vanilla extract
1/3 c. brown sugar
2 Tbsp. chopped pecans
2 Tbsp. self-rising flour
2 Tbsp. butter flavor shortening
Preparation

Heat oven to 400\u00b0.
Line muffin pan with paper liners.
Beat 1/2 cup shortening and sugar well.
Beat in eggs, one at a time. Combine 1 2/3 cups flour, oat bran, baking powder and salt. Combine banana and lemon juice.
