Hearty Lentil Stew - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 c. chopped celery
    1 c. chopped carrots
    3/4 c. chopped onion
    2 cloves garlic, minced
    1 (49 1/2 oz.) can clear chicken broth
    1 1/2 c. dry lentils, rinsed
    1 medium bay leaf
    1/2 tsp. grated lemon peel
    1/8 tsp. ground red pepper (optional)
Preparation
    In 4-quart saucepan over medium heat in hot oil, cook celery, carrots and onion with garlic until vegetables are tender.
    Add remaining ingredients.
    Bring to boiling; reduce heat.
    Cover; simmer 1 hour or longer until lentils are tender.
    Remove bay leaf.
    (Stir frequently.)
