Watermelon Rind Pickles - cooking recipe

Ingredients
    4 qt. cubed watermelon rind
    1 gal. cold water
    1 c. canning salt
    2 c. vinegar
    7 c. sugar
    1 Tbsp. whole cloves
    1 Tbsp. whole allspice
    1/4 tsp. mustard seed
    3 sticks cinnamon
    1/2 c. thinly sliced lemon (about 1 medium)
Preparation
    Pare watermelon rind, removing green and pink portion.
    Cut rind into 1-inch pieces.
    Dissolve salt in water, add rind and let stand 6 hours or overnight.
    Drain, rinse and cover with cold water in large saucepot.
    Cook until tender, about 20 minutes. Drain and set aside.
