Cowboy Breakfast - cooking recipe

Ingredients
    2 lb. ham
    5 lb. potatoes
    2 doz. eggs
    1 c. milk
    salt to taste
    pepper
Preparation
    Preheat 14-inch Dutch oven.
    Cut ham into 1-inch cubes. Place ham in
    Dutch oven and fry for 10 to 15 minutes.
    Remove the ham, leaving
    the drippings in the oven.
    Scrub the potatoes and slice them leaving the skins on.\tPlace potato slices in heated Dutch oven.
    Brown
    and cover potatoes for 20 to 30 minutes.
    Return ham
    to
    Dutch
    oven
    and mix with potatoes. Scramble the eggs
    in a bowl with milk, salt and pepper.
    Add egg mixture
    to
    ham
    and potatoes.\tStir
    until the eggs are cooked.
    Cover
    for
    10 minutes.
    Bacon can be substituted for ham.
    Chopped
    onions, cheese,
    diced green chili and oregano can be added for variety.
