Vermicelli With Zucchini - cooking recipe
Ingredients

1 1/2 lb. zucchini, sliced in 1/2-inch pieces
1 garlic clove, minced
2 Tbsp. fresh basil or 1/2 tsp. dry basil
1 large can crushed tomatoes
1/4 c. olive oil
1 medium onion, chopped
2 c. water
1/2 lb. vermicelli, broken in pieces
salt and pepper
Preparation

Saute onion and garlic in oil until lightly brown; add tomatoes and simmer 10 minutes.
Add water and bring to boil.
Add zucchini and basil and cook 10 minutes.
Add vermicelli and cook on low heat until tender, stirring occasionally.
Serves 4.
