Cornish Game Hens With Sweet Potato-Maple-Pecan Stuffing - cooking recipe
Ingredients

2 to 4 Cornish game hens
3 medium sweet potatoes
1 stick butter or margarine
1/2 c. maple syrup
3/4 c. pecans, chopped
Preparation

Remove giblets from game hens; wash and dry.
Season inside and out with salt and pepper (or lemon pepper) to taste.
Bake (or microwave) sweet potatoes.
Scoop out the flesh and mash.
Melt butter or margarine; add maple syrup.
Stir into sweet potatoes. Add pecans.
Stuff game hens.
Bake at 350\u00b0 for about 1 hour. Extra stuffing may be warmed in a small casserole dish.
