Confetti Scalloped Potatoes - cooking recipe
Ingredients

1/2 c. butter
1/2 c. chopped onion
1 (16 oz.) pkg. frozen hash brown potatoes
1 can cream of mushroom sup
1 soup can milk
1 c. shredded Cheddar cheese
1 green pepper, diced
2 Tbsp. pimento
2 c. Cheez-Its crackers, divided
Preparation

In a skillet, melt butter over medium heat.
Saute onion until tender.
Stir in potatoes, soup and milk.
Add cheese, green pepper, pimento and half of the crushed Cheez-Its crackers.
Pour into a shallow casserole.
Top with remaining cracker crumbs.
Bake at 375\u00b0 for 40 minutes.
