Minty Garlic Potatoes - cooking recipe

Ingredients
    8 red skinned potatoes
    1/4 c. olive oil
    4 cloves garlic, finely chopped
    2 Tbsp. fresh mint, chopped
    coarse (kosher) salt to taste
    black pepper to taste
Preparation
    Preheat oven to 350\u00b0.
    Prick potatoes with a fork and bake on a cookie sheet for 1 1/2 hours.
    Remove potatoes from oven, cut in quarters and place in bowl.
    While hot, toss with oil, salt, pepper and garlic.
    Gently toss in chopped mint.
    Serve warm or at room temperature.
    Serves 4.
