Chicken With Garlic And Oil - cooking recipe

Ingredients
    2 1/2 to 3 lb. chicken fryer, cut up
    1/2 c. olive oil
    4 medium potatoes, cut in 1/2-inch wedges
    6 carrots, cut up
    1 onion, sliced
    2 cloves garlic, minced
    juice of 1 lemon
    ground black pepper
    salt to taste
Preparation
    Wash chicken well and pat dry.
    Pour the olive oil into the bottom of a 14 x 10 x 2 1/2-inch pan.
    Dip chicken pieces in oil and turn to coat.
    Turn chicken, skin side up and distribute evenly in pan.
    Peel potatoes and cut into 1/2-inch wedges. Arrange around chicken with onion and carrots.
    Sprinkle garlic and lemon juice over all.
    Salt and pepper over whole pan.
    Bake at 350\u00b0 for 1 hour.
    Baste every 15 minutes or so, until chicken is cooked and vegetables are tender.
