Polenta - cooking recipe
Ingredients

8 c. water, divided
2 tsp. salt
2 c. yellow cornmeal
3 Tbsp. olive oil
fresh herbs or cheese (optional)
Preparation

Bring 5 cups of water to boil. Reduce to a simmer. Mix the cornmeal with 3 cups cold water. Stirring constantly, add cornmeal, cold water mixture and the salt to the simmering water. Stir until mixture thickens. Reduce heat and cook for approximately 10 to 15 minutes more. You may add your choice of fresh herbs or cheese. I prefer to add grated Parmesan. Grease a jelly roll pan. Spread mixture evenly. Let cool until firm.
