Ingredients

1 (5 oz.) pkg. regular vanilla pudding and pie filling
2 1/2 c. whole milk
1 Tbsp. coconut extract
1 c. coconut flakes
1 baked 9-inch pie shell, cooled
1 (4 oz.) pkg. whipped topping, thawed
3/4 c. toasted coconut flakes (for garnish)
Preparation

Combine pie filling mix and 2 1/2 cups milk in saucepan.
Cook over medium heat until mixture comes to a boil.
Remove from heat. Add coconut extract and 1 cup coconut flakes.
Pour mixture into a bowl.
Cover with plastic wrap and let cool completely.
