Sweet Potato Muffins - cooking recipe

Ingredients
    1 c. cooked and mashed sweet potatoes
    1 1/2 c. cooking oil
    2 c. sugar
    3 c. self-rising flour
    4 eggs
    1 c. raisins
    1 c. chopped pecans
    1 tsp. cinnamon
    1/4 tsp. nutmeg
Preparation
    Put raisins and nuts in boiling water for 5 minutes.
    Drain. Mix all ingredients.
    Fill greased or paper lined muffin tins 2/3 full.
    Bake for 20 minutes at 350\u00b0.
    Can bake in tube pan for 1 hour or loaf pan.
    Makes 26 muffins.
