Quick Veggie Stew - cooking recipe

Ingredients
    1 qt. sugarless commercial spaghetti sauce or tomato sauce
    1 lb. tofu, cubed
    4 c. diced zucchini (1/2 to 3/4-inch pieces)
    1 bell pepper, diced
    2 c. broken string beans
    1/2 lb. mushrooms, split
    1/2 lb. cheese, grated
Preparation
    Turn medium heat on under large pot with your favorite sugarless sauce in it and leave on as you cut and add next 5 ingredients (should take about 5 minutes).
    When all vegetables are added, cover and simmer 10 to 15 minutes, until sauce begins to boil.
    Gently stir in grated cheese or sprinkle on surface of vegetables.
    Cover and cook just until cheese melts.
