Oven-Crisp Eggplant - cooking recipe

Ingredients
    1/2 c. fine cracker crumbs
    1/4 tsp. rubbed oregano
    1/2 tsp. paprika
    1/2 tsp. salt
    1 egg
    1 Tbsp. water
    2 (1 lb.) eggplants
    1/4 c. butter or margarine, melted
Preparation
    Mix cracker crumbs with oregano, paprika and salt.
    Set aside. Beat egg with water.
    Peel eggplant.
    Cut back lengthwise int 6 segments.
    Dip eggplants into beaten egg and then into crumb mixture.
    Let stand at least 30 minutes.
    Place in shallow baking pan.
    Drizzle with melted butter.
    Bake in 400\u00b0 oven for about 20 minutes or until crisp.
