Squash Croquettes - cooking recipe

Ingredients
    2 lb. yellow squash, sliced
    2 to 2 1/2 c. bread crumbs, divided
    1/2 c. minced green onions
    2 eggs
    2 Tbsp. grated Parmesan cheese
    1 tsp. salt
    1/2 tsp. pepper
    1 c. cornmeal
    vegetable oil
Preparation
    Cook squash in a small amount of water until tender; drain and mash.
    Add 2 cups bread crumbs and next 5 ingredients.
    Add more bread crumbs if mixture is too soft.
    Shape into 18 logs; roll each in cornmeal.
    Deep fry in hot oil at 375\u00b0.
