Sole Saute Amandine - cooking recipe

Ingredients
    3 Tbsp. flour
    3/4 tsp. salt
    1/8 tsp. pepper
    1 lb. frozen skinless sole, thawed
    2 Tbsp. salad oil
    1/4 c. butter
    1/4 c. sliced or chopped almonds
    1 Tbsp. fresh lemon juice
    1 Tbsp. snipped parsley
Preparation
    Combine flour, salt and pepper in shallow dish. Dip fish into mixture, coating it on all sides.
    In hot oil, in skillet, saute fish over medium heat until golden on both sides and easily flaked with fork.
    Remove from pan to warm serving dish.
    Melt butter in same skillet, mixing with crusty bits.
    Add almonds and lemon juice; cook and stir until brown.
    Pour over fish. Sprinkle with parsley. Serve immediately.
    Makes 3 to 4 servings.
