Curried Vegetables - cooking recipe

Ingredients
    1 large red onion, cut in strips
    2 to 3 cloves minced garlic
    1 Tbsp. oil
    3/4 c. water
    1/2 c. apple juice
    2 medium potatoes, cut in 1/2 inch chunks
    1 medium carrot
    2 Tbsp. soy sauce
    1 Tbsp. curry powder
    1 tsp. grated fresh ginger root
    1/4 tsp. cinnamon
    2 c. cauliflower, cut in pieces
    1 medium zucchini, cut in 1/2 inch chunks
    1 c. frozen peas
    1 medium red or green pepper or both
    broccoli (optional)
Preparation
    Use a large soup pot and saute onion, garlic and oil until tender.
    Add the next 8 ingredients to the onion and garlic mixture.
    Bring to a boil, cover and simmer 10 minutes.
    Add remaining ingredients.
    Cook until zucchini is tender.
    You can also add broccoli.
    Serve with rice or serve plain.
    This makes a large quantity, so plan on leftovers unless you are having a party or feeding a family of eight.
