Ingredients

beets
1 c. sugar
1 c. white vinegar
1/2 tsp. salt to pt. jars or 1 tsp. salt to qt. jars
Preparation

Remove stems and leaves from beets and wash thoroughly.
Cook beets, covered, in water until they are slightly tender, but not real soft.
Pour water off, cool and peel beets.
After they are cooled, quarter or slice beets and if they are real small, you can leave them whole.
Place them in jars, have flats and rings of jars hot.
Mix sugar and vinegar in pan and bring to a good boil.
Pour over beets that are in the jars and add salt according to the size of the jar.
Place flats and rings on jars.
Place in water bath cooker until hot.
Remove from cooker, cover, until cooled and sealed.
