Hearty Rice Casserole - cooking recipe

Ingredients
    3/4 c. diced bell pepper
    3/4 c. diced celery
    3/4 c. diced onion
    2 Tbsp. vegetable oil
    2 (10 1/2 oz.) cans beef broth or chicken broth
    1 c. uncooked rice
    1 (2 oz.) jar pimento strips
    1 (10 oz.) can cream of mushroom soup
Preparation
    Saute bell pepper, celery and onion in oil until clear and tender.
    Add broth and rice; stir and simmer 5 minutes.
    Stir in mushroom soup.
    Pour into casserole dish that has been sprayed with Pam.
    Decorate with pimento strips.
    Cover and bake at 300\u00b0 for 1 hour.
