Sausage Potato Stew - cooking recipe

Ingredients
    1 onion, diced
    2 lb. smoked sausage
    10 large potatoes, cubed
    6 c. water
    rice
    black pepper
    salt
    dry parsley flakes
Preparation
    Cut sausage into 1-inch pieces.
    Put in large pot with 1 cup of water and boil until water evaporates and sausage browns in its own grease.
    Add onion and saute 1 or 2 minutes.
    Add potatoes and 5 cups of water.
    Season with salt, pepper and parsley flakes to taste.
    Bring to a boil.
    Reduce heat, cover and simmer for about 45 minutes or until potatoes are tender.
    Serve over rice.
