Zucchini Bake(Microwave) - cooking recipe

Ingredients

4 c. zucchini, grated
1/2 medium onion, minced
4 eggs, beaten
1 1/2 c. shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper

Preparation

Place zucchini and onion in 10 x 6 x 2-inch dish.
Cover with plastic wrap, turning one edge back slightly to vent.
Microwave on High 10 minutes.
Drain.
In large bowl, mix together eggs, cheese, salt and pepper.
Add zucchini and onions, stirring well. Grease dish in which vegetables were cooked.
Pour mixture into dish and cover with plastic wrap.
Microwave on High 6 to 8 minutes until center is set.
Rotate dish 1/2 turn after 6 minutes.
Makes 4 to 6 servings.
