Super Bowl Chicken - cooking recipe
Ingredients

12 boneless chicken breasts or thighs (with skin)
16 oz. Ricotta cheese
16 oz. Mozzarella cheese, grated
1 (10 oz.) pkg. frozen, chopped spinach, thawed, drained and squeezed of all moisture
olive oil
garlic salt, basil and fresh grated Romano cheese
Preparation

Mix the Ricotta, Mozzarella and spinach together.
Make a pocket between the skin and the chicken breast or thigh.
Fill the pocket with the cheese and spinach mixture.
Place the chicken in a large baking pan.
Brush with olive oil.
Sprinkle with garlic salt, basil and Romano cheese.
Cover with foil.
Bake at 350\u00b0 for 40 minutes.
Remove foil.
Bake at 350\u00b0 for 20 minutes longer. Serves 6 to 8.
